As our first organic filter roast we have the organic coffee developed in the Taunus for you. This coffee, which tastes super nutty and caramel, was dedicated to the beautiful landscape. Our #Taunus Mountains is one of our most popular coffees because you can enjoy it with all filter methods and even with a moka pot. This organic coffee is an Arabica blend from Brazil and Nicaragua. Sabrina tried this coffee in the hand filter – super tasty. In the French press or filter machine it is a little more intense.

Certified Organic Espresso
Well, our organic espresso #12 from Brazil is a very tasty Specialty Coffee (Single Origin). When we tried this espresso as a cappuccino right after lunch, the nutty-caramel taste literally jumped out at us (“Salty promotes sweetness” – that’s what we learned in the cupping seminar) and as a pure espresso it tastes very nutty. We are so happy to have found this organic certified espresso from the Dutra family, where two brothers run the farm. And the coffee even has an SCA score. Incidentally, Mario says he would taste like this nut nougat cream at breakfast.

Certified Organic Espresso
How about an excellent BIO espresso? Our Flatberry Coffee #17 is tasty, round and strong. This organic coffee comes from Brazil – from the Mantiqueira de Minas region – and is grown at an altitude of 1,200 meters. The farm has produced many excellent coffees and has been organic certified since 2004. This espresso tastes of dark chocolate, sugar cane and cocoa with side notes of grapefruit and honey. Wow – that’s an interesting flavor profile, isn’t it? You should definitely try this organic coffee. This is also supported by an SCA score of 83, which makes this coffee a real Specialty Coffee. This espresso is 100% Arabica.

Organic Coffee as Melange
As another organic coffee, we have roasted coffee beans as an espresso with our Melange as a strong blend. However, this ORGANIC coffee consists not only of one coffee, but of two. Because our #Taunus Melange is a mixture of an Arabica and a Robusta. One of the Arabicas comes from Brazil and was grown at an altitude of 1,200 meters. The Robusta comes from Uganda. The Arabica coffee bean ensures a particularly round and soft mouthfeel. The Robusta helps to achieve an even stronger crema. Our #Taunus Melange has an aroma of dark chocolate, milk chocolate and hazelnut with a side note of sugar cane.
This spicy espresso blend is ideal for fully automatic machines, portafilter machines and espresso pots (moka pots). Order these coffee beans as whole beans and not ground. This is how the organic coffee tastes particularly fresh.

Our certified organic coffee #11 ZEN Kaffee from Colombia is a decaffeinated coffee (DECAF). The coffee beans were gently decaffeinated using the water method in the country of origin. The Mountain Water Method was used for this.
We have developed a roast profile for filter roasting for this decaffeinated coffee. We like it best in the filter machine or in the hand filter. This organic coffee brings flavors of caramel and strawberry. The finish is reminiscent of honey. The coffee is 100% Arabica and has an SCA score of 84.5 points. That’s a great profile, isn’t it?

Or would you prefer organic coffee without caffeine?
Perhaps you would prefer to try a decaffeinated ORGANIC coffee that tastes mild and is sustainably grown. We really like our decaffeinated organic coffee #13 because it doesn’t necessarily taste like decaffeinated coffee at first taste. This DECAF comes from the east of Mexico and is grown at an altitude of 900 – 1,100 meters. The coffee beans have an aroma of hazelnut and roasted almond, with an aftertaste of sugar cane.
The organic coffee was gently decaffeinated using the water process (Swiss Water Method®) so that its full aroma is retained. Perfect not only for pregnant women, but for everyone who prefers it caffeine-free.

When it comes to DECAF, we also have another ORGANIC coffee. Unlike our Flatberry Organic Coffee #13, these coffee beans from our #14 have a chocolaty flavor profile – a heavy chocolate aroma. That sounds delicious, doesn’t it?
This ORGANIC coffee tastes really delicious and is a good alternative, especially for pregnant women, because the coffee beans are mild. The coffee is also suitable as a drink for the evening hours if you want to enjoy a coffee – but without the stimulating effect of caffeine. This DECAF comes from Peru and grows on the slopes of the Andes in wide valleys. After drying, the green coffee was gently decaffeinated using the Swiss Water® Process and then roasted by us. It’s a favorite with our decaffeinated coffee fans.

What couldn’t be better than entering the topic of organic coffee in the Specialty Coffee scene with our ORGANIC #Coffee Package? Of course! How did we come up with this? This had been in the planning for a long time, but we actually received the impetus from Judith: “Is it possible to get an organic sampler package?” – Yes, it is.
In our organic coffee sample package we have roasted four of our organic coffees. You can choose whether you want the package to be filter roasted, espresso roasted or mixed.

How is ORGANIC coffee made (origin)?
Of course, organic coffee can only be called that comes from a certified farm and has been grown under the appropriate conditions. These conditions are checked on site by the relevant auditing company.
The organic certification in the country of origin considers that the cycles of nature are taken into account and that the balance between the soil, water, plants and animals is promoted and maintained.
With organic coffee – as with other agricultural products – care must be taken to ensure that the manufacturing processes do not have a negative impact on human health and that a high level of biological diversity is maintained.
For farming, which also includes coffee, there are a number of criteria that must be met. For example, the preservation and promotion of soil life and the fertility of the soil but also the prevention of soil compaction play a role. Another criterion is the selection of plants that are resistant to pests and should therefore reduce the use of pesticides. Organic coffee is therefore, so to speak, fair to nature. For organic coffee, careful processing using biological, mechanical and physical methods is also necessary.
Oh – and of course, as a coffee roaster, we are also subject to special requirements in order to be organically certified.
What are the criteria for ORGANIC certification?
Organic coffee is based on Regulation (EC) No. 834/2007 with Article 29 Paragraph 1 and Regulation (EC) No. 889/2008. The main point is the continuous traceability of the coffee and compliance with the relevant standards. Everyone involved in the supply chain from the farmer to the roaster must be certified. Certification includes clear labeling of the coffee and separate storage and separate processing of non-organic coffee, i.e. conventional coffee. This is fair to consumers who differentiate between certified organic products and non-organic certified products.
For a Specialty Coffee roaster, this means that an inspection by the auditing company is carried out at regular intervals. This is both announced and unannounced. During the ordering process, the Specialty Coffee roaster has the organic certificate presented and checks the incoming goods. The delivery note must show the corresponding organic labeling of the exporter or importer. The green and roasted coffee must be stored separately and clearly visible from conventional coffee. If available, the organic coffee is processed and packaged in separate machines. If there is only one roaster, the machine is first cleaned before the coffee is processed and only then is the organic-certified coffee roasted first. This ensures that the organic coffee does not come into contact with other coffee. The packaging must then display the appropriate seal with the identification assigned to the roaster. For example, at Flatberry the seal EE-ÖKO-03 must be used on the label and in the documents.
How is the ORGANIC quality checked and ensured?
The entire chain from the farmer to the organic coffee roaster is audited and certified accordingly. Of course, the Specialty Coffee roaster only receives a certificate if the relevant standards are met and the documentation is consistent. Regular audits ensure that the standards are met. In addition to the audits, a clear labeling of the products and the processes is useful.
The processor of organic coffee is assigned a unique identifier, for example EE-ÖKO-03.233-0002333.2022.003 (Flatberry Specialty Coffee OÜ).
Only organically certified roasters are allowed to bear the organic seal. Roasters that are not certified organic are not allowed to bear the seal. That is only fair to the roasters, who ensure compliance with the standards and go through the organic certification process.
Why should you choose an ORGANIC coffee?
If organic coffee can call itself that, it is certified organic and everyone involved in the processing of this coffee contributes to the protection of ecological systems.
For the coffee drinker, the seal gives orientation and the certainty that the standards set for ecological /organic cultivation and processing are observed. Organic coffee differs from non-certified organic coffee in the chain from farmer to coffee roaster.

We are organic certified – out of conviction! Our core idea with organic coffee is the sustainable cultivation and processing of food. For us, the protection of the environment and species is clearly in the foreground. This protection has a long-term positive effect on us humans.
